Rice noodles are a blank canvas for delicious flavor. Large swaths of noodles, known as kuay tiew cent yai, are typically used in stir-fried dishes like pad see eiw and drunken noodles. Thinner noodles, or cent lek (aka small noodles), can be served up in noodle soups like kuay tiew tom yum or boat noodles. You can roll rice noodles into tight cylinders the size of Korean rice cakes to prepare kuay jub, a street food soup that’s known for its fragrant and peppery broth.
