You could buy dumpling skins in the freezer section of an Asian grocery store, but what’s the fun in that? Making them yourself requires a bit of finger dexterity to ensure you’re rolling the skins out thinly and evenly, but when you do it yourself, you get to decide the shape and size of your dumplings.
In a medium bowl or large liquid measuring cup, dissolve the salt into the hot water. Put the flour in a large bowl and gradually add the salt-water mixture one-third at a time, mixing with your hands, until fully combined. The dough should feel firm, elastic, and not too wet.
