This recipe is a shout out to the ladies who raised me. I grew up eating this roasted eggplant dip in the kitchen of my mom’s restaurant with her cooks. I like to think of it as Thailand’s answer to baba ghanoush—but with a more roasted flavor and a spicy kick. The traditional method is to pound it in a mortar and pestle, but you can also blitz it in a food processor.
