My mom used to make this dish whenever I had friends over as a kid. It used to mortify me—why couldn’t we order pizza instead?—but my friends loved it, and I’ve grown to love it, too. This is a recipe that truly highlights how adaptive Thai immigrants are and is a jewel among the Thai American diaspora. Penne, ziti, and rigatoni work great as well.
