Mom’s Siam Chicken

I can say, without a doubt, that you won’t find this dish in Thailand—but that doesn’t mean it’s not worth making! I get a lot of requests for this dish. It marries Thai flavors with a Western approach to Asian cuisine. The “Siam” part of this dish is the use of red curry paste, and the rest of the dish is made of red bell peppers, carrots, and chicken combined into a silky slurry.
