Laab, a northeastern Thai dish with roots in Laos, can be made from pretty much anything. The main thing to keep in mind, what makes a laab truly a laab, is the combination of herbs and aromatics (mint, shallots or red onion, cilantro, and toasted rice powder cannot be omitted).
