Ruby Chestnuts in Coconut Soup

As a kid, my favorite part of ruam mitt were these almost boba-like ruby-hued water chestnuts. I would always make it a priority to scoop these out from the mix of other sweet delights first. But it wasn’t until I was twelve visiting Chatuchak (Bangkok’s largest outdoor market) that I discovered a vendor selling tap tim krob, a bowl strictly consisting of these gems, a total game changer.
