Patricia Lousada is a first-generation American, now settled in England. Her mother was Italian, and she learned some of her best recipes from George Balanchine when she was a ballet student. She wrote this recipe for me for an Observer series on alternative Christmas feasts. The stuffing can be made in advance and the oysters opened in the microwave.
