I have eaten memorable oyster omelettes in Singapore, and I think I dimly perceive in them the original of this San Francisco dish given by Mrs Fisher. The only reason I include it, besides that it has some of the status of a classic, is that Christmas is the only time of year that I can imagine anyone having the surplus of oysters that would be necessary before you’d even consider making a dish like this.
