Ingredients: 6 Tbsp warm milk; 3 Tbsp soured or double or heavy cream; 2 eggs; 3 Tbsp fresh coriander leaves, very finely chopped; 1 hard-boiled egg, chopped; egg wash: 1 egg, 1 tsp water and a pinch of salt; salt and pepper; 2 tsp dried easy-blend yeast; squeeze of lemon juice; 450 g (1 lb, 3½ cups) white flour; pinch salt; knob of butter; 450 g (1 lb) brown cap mushrooms, finely sliced; ½ large Spanish onion, minced; 65 g (2½ oz, ¼ cup) softened butter

When Patricia Lousada was a ballet student with Balanchine, the big culinary festival was Easter. But at Christmas he handed these round with the drinks. You can use a huge variety of fillings — meat, fish or cabbage — so long as it is moist and well-seasoned. Lady Lousada says you can use puff pastry in place of the yeast dough, ‘good, but not as authentic’.
