Fresh anchovies sometimes appear at the fish market during summer. These fish are of the highest quality and are simple to prepare. The fish are first salted by being laid on a bed of sea salt for 4 hours (2 hours each side).
Discard any broken or bruised fish. The fish should look bright and the light should catch the colour of their scales.
In a mortar and pestle or an electric coffee grinder, make the seasoning by pulverising the peppercorns, bay leaves and marjoram.
Spread the salt on a tray so that the tray is evenly covered, then lay the fish on the salt and sprinkle over the seasoning. Cover w
