A simple but delicious luncheon dish. Ask the fishmonger to remove the head and backbones from the fish.

Ingredients

  • 8 large garfish or 16 small fish
  • salt and freshly ground black pepper

Method

Place the fish flat on a cutting board, skin side down. Season with salt and pepper. Mix the remaining ingredients together in a bowl. Brush the fish generously on one side with half of the mixture.

Preheat the grill (broiler) so that it is hot. Place the fish under the grill, mixture side uppermost, and cook them close to the heat for 3-5 minutes, or until cooked. Brush the remaining m
