  • 12 fillets (1 kg/2 lbs) sand whiting

Method

Place the fish fillets in a greased baking pan.

Put the wine, thyme, butter, salt and pepper in a saucepan over a medium heat and reduce the mixture by half.

Pour the hot wine mixture over the fish. Shake the baking pan so that the wine is between all the fillets. Bake in a preheated oven (220°C/425°F
