Method

Bring the salted water to the boil in a large pot. Add the spinach, pushing it under the boiling water with a spoon. As soon as the leaves have wilted, strain the spinach from the water and plunge it into the iced water.

When the spinach is cold, strain it and press the excess water from it with your hands.
