Ingredients

  • 6 good sized vine-ripened tomatoes, peeled
  • 4 golden shallots, finely chopped
  • 3 garlic cloves, crushed

Method

Place all the ingredients except the tomatoes in a saucepan. Bring to the boil and simmer for 5 minutes.

Place the tomatoes in a baking or gratin pan, stem sides down, and spoon over the cream mixture.

Bake in a hot oven (200°C/390°F) for 12-15 minutes<
