This recipe is similar to Pommes Anna, hut it requires a little less attention to detail. It is very good with roasted lamb and beef.
Peel, finely slice and wash the potatoes. Pour the olive oil into a baking pan and brush it around the sides. Mix together the sliced potatoes, garlic, herbs and seasonings and pile into the baking pan. Press the mixture down firmly. Boil the water and pour it over the potatoes.
