Cut the potatoes into 3 cm (1¼ in.) cubes and place in a large saucepan. Cover with cold water, add 1 teaspoon of salt and bring to the boil. Simmer for 12 minutes. Drain the water from the saucepan and return the saucepan to the heat to briefly, to evaporate the small amount of water remaining.
