A decorative way to serve George Bush’s favourite vegetable. Recommended with Roasted Barbary Duck Glazed with Peppercorns and Leg of Boar with Soured Cherries.

Ingredients

  • 1 kg (2 lbs) broccoli

Method

Butter 6-8 cup-sized dariole moulds.

Trim the broccoli into small, 3 cm (1¼ in.) florets and cook in boiling salted water for 6-8 minutes, or until tender. Drain and cool under cold running water. Pat dry the cold broccoli with paper towels (absorbent kitchen paper).
