  • 100 g ( oz) butter
  • 12 golden shallots, chopped

Method

Melt the butter in a deep frying pan or skillet over a medium heat, and cook the shallots for 2 minutes. Add the garlic, then increase the heat and add the mushrooms, tossing them continually. Add the herbs and season with salt and pepper. Allow to cool. (This section may be prepared in advance.)
