A quick, simple dish which preserves the juicy character of the vegetable. Fresh green string beans may be used instead of long (yard-long) beans, which may be 30 cm (12 in.) or more in length.

Ingredients

  • 375 g (12 oz) long (yard-long) beans
  • 7-8 black (or shiitake) mushrooms, presoaked

Method

Soak the mushrooms in 1 cup (250 mL/8 fl oz) water. Reserve this liquid.

Wash and pat dry the beans thoroughly, then cut them into 4 cm (1½ in.) lengths.

Cut the mushrooms into 1 cm (⅓ in.) strips. Heat the oil in a preheated frying pan or skillet over a high heat and when it is hot, add the beans. Reduce the heat to moderately hot and stir-fry for 1½ minutes. Stir in the mushro
