Marc de Bourgogne is a spirit made from the grape residues of wine; the skins and the stalks. In its early days it is raw and unpalatable, but after ageing for years in oak it develops a smoky flavour that I love, especially when teamed with fresh figs.

Ingredients

  • 12 firm, ripe, black figs

Method

Destalk the figs and cut them in half Melt the butter in a large frying pan or skillet over a low heat. Gently brown the cut side of the figs in the butter without allowing the butter to burn. Sprinkle the sugar over the figs. Increase the heat to high, shaking the pan so that the sugar falls to the bottom and soaks up the butter. Add the orange juice and peel and then the Marc.
