Goat cheese has a distinctive flavour, immediately discernible even in the youngest of cheeses. As the cheese ages, the more zing it develops. The perfect combination of goat cheese and fruit is brought together in delicious harmony in this recipe.

Ingredients

Shortcrust pastry

  • cups (200 g/ oz) plain (all-purpose) flour
  • ⅖<

Method

Food processors make the best shortcrust pastry. Mix the flour and butter until the mix is crumb-like (approximately 15 seconds). Add the eggs and pulse until assimilated. Add the water gradually until the pastry begins to coagulate. Press it into a flattened ball, wrap it in plastic wrap (cling film) and rest it in the refrigerator for 1 hour.
