Pour the beer into a saucepan and bring it to the boil.
Simmer the onion in the beer for 5 minutes, or until the beer is reduced by half. Stir in the mustard and the cheese. When the mixture is hot, remove the saucepan from the heat and stir in the egg yolks.
Toast and butter the bread. Lay it on a tray and spread it with the cheese mixture. Grill (broil) until brown.
