In a small bowl, mix together the ingredients for the dressing. Brush the bread with olive oil. Place a layer of the onion on the bread. Dip the slices of prosciutto (Parma ham) in the dressing and place them on top of the onion layer.
Mix the remaining dressing with the olives and spoon it onto the prosciutto. Garnish with the sprigs of chervil.
