A quick lunch dish which can be prepared in advance and served with a green salad.

Ingredients

  • 2 cups (300 g/ oz) shell pasta

Method

Cook the pasta in a large saucepan of boiling salted water (4 cups/1 litre/1¾ imp. pints) until tender (approximately 10 minutes), then drain, rinse under cold running water and drain again. Dry the pasta in a towel, put it in a bowl and toss in a little olive oil to prevent it drying and sticking together.
