Spice bread or pain d’épice is a fragrant, sweet French bread that tastes even more delicious the second day after baking.
Put the boiling water into a large saucepan, add the honey, sugar, bicarbonate of soda and salt, and stir until the sugar is dissolved. Flavour with the rum, anisette and cinnamon. Sift the flour into a mixing bowl and slowly stir the syrup into it to form a smooth batter. Strain the batter through a fine sieve. Add the rest of the ingredients and stir until incorporated into the batter.
