Build your fire in a shallow pit dug in the earth.

Ingredients

  • 2-3 kg (4-6 lbs) fish, preferably trout, tuna or snapper
  • salt and freshly ground

Method

Season the fish generously with salt and pepper. Mix together the herbs, butter, lemon and onion and stuff the cavity. Wet the sheets of newspaper and wrap the fish tightly, layer on layer.
