Soak the bamboo skewers in water for 2 hours or overnight.
Shell the prawns (shrimps) leaving the tails on. Thread them onto the skewers, folding them over in their natural shape.
Put the orange and lemon juice, saffron, salt and cayenne pepper in a small saucepan and bring to the boil. Reduce by half. Allow to cool, add the oil and then the parsley and thyme (or marjoram). Pour
