Crush the fennel, star anise, coriander seeds, cinnamon and mace using a mortar and pestle. Add the mixture to the vodka (or neutral spirit) and leave to rest in a warm place for a month. Filter the Equid mixture through a triple layer of muslin and add the sugar, which you have dissolved in 155 mL (5 fl oz) of water.
