Moroccan Carrot, Orange & Radish Salad

I love this salad, which is a great way to use both carrots and radishes, and, like my mother, I love using orange-flower water, with its amazingly elusive flavour. I have always associated oranges with North Africa, Morocco in particular, as they have a special sweetness there that is quite unique.
