Indonesia is the world’s third-largest producer of cocoa beans, most of which are exported. The national taste for chocolate is expanding though, and artisan chocolate houses are joining multinationals in producing bars locally. They are clearly having fun, infusing flavours from cloves and ginger to tangy fruit rujak. It was at a chocolate factory in Bali where we tasted a rich, fragrant chocolate and lemongrass ice cream and were entranced by the combination.
