Betawi people chill this spiced drink by shaking inside a bamboo stick filled with ice cubes, making a ‘pletok pletok’ sound that gives it its name.

Ingredients

  • 75 g ( oz) ginger, skin scrubbed, sliced
  • 3 lemongrass sticks, trimmed, bruised and tied in a knot
  • 3 lime leaves
  • 2 pandan leaves, bruised and tied in a knot
  • ½ cinnamon/cassia stick
  • 2 cardamom, lightly crushed
  • 2 clove
  • grating of nutmeg
  • 50 g (½ cup) dark palm sugar (gula jawa)

Method

Put all the ingredients in a pan with 750 ml (3 cups) water, cover and bring to the boil. Simmer for 10 minutes, then remove from the heat and leave to cool before straining. Serve chilled.
