Betawi people chill this spiced drink by shaking inside a bamboo stick filled with ice cubes, making a ‘pletok pletok’ sound that gives it its name.
Put all the ingredients in a pan with 750 ml (3 cups) water, cover and bring to the boil. Simmer for 10 minutes, then remove from the heat and leave to cool before straining. Serve chilled.
