A warming tea from the cool highlands of West Java. It is usually drunk very sweet and milky. Minangkabau street food sellers skilfully blend the tea with sweetened egg yolk and condensed milk to create a rich, two-layered drink topped with ground cinnamon. I prefer it black.

Ingredients

  • 1 cinnamon/cassia stick, broken
  • 1 lemongrass stick, trimmed, bruised and tied in a knot
  • 1 slice ginger, skin scrubbed, bruised
  • 5 star anise
  • 6 cardamom
  • 10 cloves
  • ¼ teaspoon coriander seeds

Method

Put all the ingredients in a pan with 750 ml (3 cups) water. Cover, bring to the boil slowly over a low heat and simmer for 10 minutes to brew. Strain the infused liquid. Serve as it is or with milk and sugar to taste.
