Ingredients

  • 500 g cumquats, washed
  • 500 g castor sugar
  • 750

Method

Blanch the cumquats in boiling water for 2 minutes, then drain and cool. Place them in sterilised glass jars, then add the sugar, sherry and vanilla and seal. Tip the jars back and forth and upside down so that the sugar dissolves in the sherry. Tip the jars in this same way every couple of hours for the first few days then store in a dark cupboard for 2-3 months until the cumquats have softene
