  • 100 ml peanut oil
  • 25 g raw peanuts, blanched
  • 1 small

Method

Heat the oil in a frying pan and fry the peanuts over moderate heat until golden. Strain the peanuts, reserving the oil, and allow to cool. Blend the cooled peanuts in a food processor with the chilli, ginger and garlic. Add the herbs and half the reserved oil, and blend to a smooth paste. Blend in the palm sugar, fish sauce and lime juice and process until the herbs are finely chopped. With th
