  • 90 g unsalted butter
  • 1 small white onion, finely diced
  • 2 small cloves garlic, cho

Method

Heat 20 g of the butter in a frying pan and saute the onion and garlic for about 4 minutes until softened. Add the bacon, pancetta and thyme and saute until it starts to crisp and colour. Remove from the heat and tip into a bowl. Return the pan to the heat, melt another
