Made from the smaller Asian red shallots, these crisp, wafery slices are sprinkled over stir-fries, noodle dishes, curries and so on. They can be bought ready-made from Asian food stores, but are easy to make at home.

Ingredients

  • red shallots, peeled
  • vegetable oil, for frying

Method

Finely slice the shallots lengthways. Heat a 4 cm depth of oil in a wok or heavy-based pan, add the shallots and cook over moderate heat until golden brown, stirring occasionally for even cooking - the shallots should float freely in the oil as they cook. Remove the pan from the heat immediately an
