Ingredients

  • 2 egg yolks
  • 20 ml fresh lime juice, strained
  • 25 ml

Method

Blend all the ingredients except the oils in a food processor. With the motor running, slowly pour in the combined oils until thickened and emulsified. Taste and adjust the seasoning if necessary. Keeps in the refrigerator for up to 3 days.
