  • 1 tablespoon Sichuan peppercorns
  • 1 tablespoon white peppercorns

Method

Dry-roast the peppercorns and salt together in a pan until fragrant. Cool, then grind to a powder. Pass through a fine sieve and store in a sealed jar. Best used within about 2 weeks.
