  • 1 chicken carcass
  • 1.5 kg free-range or organic chicken

Method

Wash the chicken carcass and chicken in cold water to remove all blood. Combine all the ingredients in a stockpot and cover with cold water. Bring to a boil over gentle heat and simmer slowly for 2 hours, skimming frequently to remove any scum.

Carefully remove the chicken carcass and the chicken; strip the meat from the chicken and keep for another use, then discard both carcasses. Str
