Tofu is a constant feature on our vegetarian menu, an ingredient that offers amazing diversity and possibilities for its preparation. I love it for its creamy texture and, when seasoned and deep-fried, it even manages to sway those who normally would not consider eating it. Fresh samphire is a seasonal sea vegetable which I love to use in many of my Japanese-inspired dishes.
