The premium grade of grain-fed beef is of paramount importance for the success of this dish. Wagyu is a current favourite in Australia, but other beef such as Kobe or the French Charolais works just as well as long as there is a discernible marbling of fat in the meat. A small portion of rich meat like this is all that is required to satisfy and thrill the tastebuds, and the clean flavours of the salad cut through the rich fattiness of the meat – making an ideal partnership.
