This dessert is a tribute to the cherry blossom season, a highlight of the Japanese calendar that is cause for much celebration. This quantity will make 6–8 meringues, as it’s too difficult to make the mix in a smaller quantity. I always make a few extra anyway so I can choose the very best-looking ones to serve. The meringues should be cloud-like in their texture, almost like biting into puffs of sweet air.
