This easy-to-make soup is inspired by the hundreds of shopfronts with their bronzed and lacquered roast ducks on display in the window. Roast ducks have become something of a national symbol for China throughout the world. Every self-respecting city has similar shops and this certainly takes the hard work out of cooking – just zip down to your local barbeque shop and take it from there.
