Jook is a traditional Chinese breakfast dish, hearty and comforting. It’s the Chinese equivalent of Scottish-style porridge, but with a more savoury note. I worked the idea into a more substantial offering when I was matching Asian food flavours and dishes to a Rymill MC2, a Coonawarra red wine that’s made in the style of Tuscan Chianti by its winemaker John Innes.
