For the Chinese, the number eight signifies good luck and prosperity. In China this stuffing is known as ‘eight jewel’ or ‘eight treasure’ stuffing, a Hunanese specialty. With its glistening soy-lacquered skin, this is one of the most festive duck dishes imaginable. Unless you are confident enough to tunnel-bone the duck yourself, ask your butcher to do it for you. It’s a vital part of the recipe – essentially, you are making a really big sausage with the duck as the outer casing.
