Lobster Lollipops

Encapsulating the quintessential tastes of Vietnam, these lollipops became a popular snack on our London bar menu. The idea of the savoury lollipop can be credited to Spanish chef Ferran Adria at the start of the millennium, and it has since become a popular item on several Australian menus. The lobster meat can be replaced with other shellfish, such as prawn, marron, yabby or scampi tails.
