This is a variation on a salad we were shown by the chefs at the Metropole Cooking School in Hanoi. I have chosen to use fish instead of the usual roasted pork or chicken meat, but it’s also terrific with cooked crab meat or small prawns. If you can’t get mackerel, any other oily fish like bonito or albacore tuna would be fine to use. The trick with preparing banana blossoms is to make sure you only use the softer inner layers and that you discard any immature bananas that grow between the
