In Cambodia the fish used for this salad would be the river catfish, which has its own distinctive flavour. I have chosen the milder-tasting rainbow trout, a freshwater or river fish we have easy access to in Australia. You can buy the fish already smoked from your fishmonger. Another suitable alternative would be Victorian smoked eel, available from fish markets or better fishmongers.
