Once again, the common link is the combination of coconut and lime, this time using the texture of rice to carry them. I would serve this in elegant glasses or bowls to give the rice a defined shape. To offer contrast to the richness of the creamed rice, I use the small red papayas from north Queensland for their taste and texture, which are conveniently available throughout the year.
